On the human taste perception: Molecular-level understanding empowered by computational methods

The perception of taste is a prime example complex signal transduction at the subcellular level, involving an intricate network molecular machinery, which can be investigated to great extent by tools provided Computational Molecular Modelling. present review summarises current knowledge on mechanisms root transduction, in particular receptors, highly specialised proteins driving activation/deactivation specific cell signalling pathways and ultimately leading five principal tastes: sweet, umami, bitter, salty sour. former three are detected similar G protein-coupled while latter two transduced ion channels. main objective provide general overview structures date all receptors techniques employed for their modelling. In addition, we analysis various ligands known above-listed including how they activated presence target molecule. last years, numerous advances have been made research computational investigation ligand-receptor interaction related receptors. This work aims outline progress scientific about understand involved transfer information.
